Does odor come out of it?

no. It seals great and no odor comes out of the container.

how long will item stay fresh?

It forms an airtight seal. So it depends on what you put in it. If you use it for coffee it stays fresh for months, like four or so as coffee generally does not have any bacteria that makes it decompose and there wont be any getting into the seal. The same goes for most seeds. But if you put something like, say, a piece of celery or a piece of an apple, it may only be a few days - depending on the temperature. That's a good experiment to try.

Do you think it would hold 1/2 -1 oz of tobacco?

Yes, it could hold between 1/2 to 1 once, but more than one once might be pushing it. It would all depend on how fine the cut is. A fine cut tobacco is more dense and canister could possibly hold a bit more than one oz. but, not much more of this finer cut tobacco. Hope this helps. I'm using mine to store my small Fuji camera in its case along with a dry moisture control packet. Sounds weird, but it works great as a hard case holder.
