High Quality Non-Stick Pan -- Care Required!
The only pans I own are GreenPans. I was gifted a set by a family member when I moved out on my own for the first time and, after properly learning how to use these, I now have my kitchen equipped with them.QUALITY: I do enjoy that these are non-stick but safe to use and healthy enough to prep food on top of. The pan, like all GreenPans, is heavy to lift. Construction is solid and elegant. The handle never gets hot, ever.PERFORMANCE: Food cooks evenly, pan heats up fairly quickly. The non-stick on this pan is the best... Food will literally glide around the surface even if you don't put any cooking spray on the pan. Wonderful! I especially love this pan for eggs, because it's the perfect size and I can make them over easy without ever breaking a yolk.LONGEVITY: Here's the kicker -- if you do not treat these pans how they should be treated, they will ruin and in turn they will ruin your food. I made this mistake with my first GreenPan. You absolutely cannot use these pans with metal utensils. You cannot wash these pans with anything abrasive, including gentle abrasive on the back of a sponge. You cannot let a meal burn on this pan. You cannot leave grease in this pan for a few hours to clean it up later. These actions WILL RUIN your pan and it will become sticky when dry no matter how many times you wash it. In addition, your food will not cook properly and will always stick to the pan. If you only use plastic or wooden utensils, cook with care and do not burn, and was promptly with a gentle sponge these pans will last you for a very, very long time and you will enjoy the non-stick coating without any problem.

My Green Pans are GREAT!
I wanted to replace my old nonstick fry pans with a healthier alternative. After much research I chose a set of ceramic coated fry pans by Green Pan. I bought an 8", 10" and 12" from the Paris collection. I also bought matching glass lids. These pans are well made and sturdy. They are a delight to cook with, and cleanup is super-fast and easy. I am very pleased with these pans from Green Pan, and I highly recommend them.

I cook for a living, but I also have to cook at home. When my high end nonstick pan recently gave up the ghost after years of service, I decided to replace it with something a bit more affordable. Here are my thoughts after having used it several times:Pros: it's lightweight, which children or people with disabilities may find to be helpful (my old Tri-Ply pan of the same size was quite heavy); it's affordable; the nonstick surface held up relatively well (see note below); it can be put into the dishwasher; it can be put directly from a burner into a hot oven or vice versa; the heat distribution for this pan is acceptable at lower heat (I cooked a PERFECT omelette with no browning whatsoever, but see note below); I've had absolutely NO ISSUES with "sticking" as some other reviewers have had. I suspect the sticking they report is related to improper technique and the heat being much too high for what they're cooking.Cons: because the pan is lightweight while the handle is solid, I couldn't get it to balance properly on the burner when I sauteed a small shallot (this is *absolutely* a safety issue); the product description says metal utensils can be used, but when I gently tapped the side of a Microplane against the edge of the pan to knock out some grated garlic, it left small marks; at higher heat, the heat distribution is somewhat off and resulted in browning that wasn't uniform across the pan.Overall: this is a decent pan, but don't expect to get the performance of something higher end. BE VERY CAREFUL when you're dry heating the pan with nothing in it (which you would do before searing meat) or when using it to toast spices, pine nuts or saute a shallot -- the pan WILL tip. For many people, this will be a "deal breaker," so be warned.

High quality green pan
I absolutely love this pan! After using it over a dozen times now, I can't believe I spent so many years settling for cheap non-stick pans. The Original Green Pan cooks food evenly without sticking, and requires only low to moderate heat. It is so easy to clean! Just let the pan cool down, add a bit of soapy water, and use a kitchen sponge to wipe out food bits and residues. I dry it immediately with a soft cotton towel and return it to its designated cupboard space.Speaking of this pan's non-stick surface, I love that it does not emit harmful chemicals into the air or the food, as I'm quite particular about reducing industrial products and by-products whenever possible.I also really like the style of this particular pan, the Paris Pro model. It has an attractive handle that stays cool even after the pan is over heat for several minutes.The only thing I don't like is that the manufacturer recommends never using cooking sprays because the aspirant can damage the anodized surface. It's an issue for me because I prefer to NOT use pressed oils in my food due to the added unnecessary fat calories (I don't even keep such oils in my kitchen!). But I can use water, wine, broth, or nothing in the case of some foods. Aside from that minor challenge, this pan is quickly becoming my new favorite for sautéing and braising, and re-heating small portions of leftovers.I separately bought the matching glass-and-metal cover, which helps with cooking foods like mushrooms, onions, fennel, and cauliflower, which I like to caramelize before softening.The price for this pan (and the cover) may seem high to some folks, but I feel it is worth the cost to have a pan that will likely last a lifetime when cared for properly! I can't say that for ANY of the other inexpensive non-stick pans I have purchased in the past.
