Can you use sharpies on this?

I have. Yet there is some bleed through. I have tucked a piece of small cardboard or an old greeting card in my sketchbook to catch any color bleeding

What is the cover like? Can you remove the brightly colored art in the item picture (for a solely black cover)?

It comes with the cover that’s on it. It’s a spiral style book so no you can’t remove it unless you tear it off. It would be hard to replace it

Is the paper acid-free?

If you click on the description it says it is acid free. It is a quality thickness.
