I've loved this stuff for years, this is the real deal (and cheap!) with a 2025 expiration.
What can I say other than Vigo black beans and rice is awesome. Fairly hard to find in local stores, so I bought this 12 pack. Came in a factory box, packages have a late 2025 expiration. Crazy flavorful, and tastes even better as leftovers. One bag makes a ton, you add 3-1/4 cups of water (I add 2tbsp extra virgin olive oil) and simmer for 25 minutes. Easy peasy. I like it a little on the drier side, so I usually only add 3 cups of water. Top it with diced tomato and some cheese chunks... maybe a little hot sauce and eat with just about anything. I've even eaten it on crackers and with fried eggs in the morning. Yummmmm!
