How many microns is the mesh on these bags please?

Couldn"t tell you the micron size but it is just right. Get the flavour of the hops but it retains the bulk of the crud

How does this bag prevent contact with the hot kettle bottom as it says in the photographs?

I suspend the bag by using a metal bar across the top of my pot keeping it up from the bottom of the pot. I hope this is helpful.
