Basically it's Spam Sushi. Here's a recipe I use.Spam MusubiServings: 6-8Ingredients:2½ cups sweet rice (short grain or sushi rice)2½ cups water7½ Tablespoons rice vinegar1 can Spam4-5 sheets sushi nori (dry seaweed)For Sauce:¼ cup oyster sauce¼ cup soy sauce¼ cup honey2 Tablespoons rice vinegar1 teaspoon ground gingerDirections:Soak uncooked rice for 4 hours; drain and rinse.In a saucepan bring 2½ cups water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes. Remove from heat, stir in rice vinegar, and set aside to cool.In a separate bowl, stir together soy sauce, oyster sauce, honey and rice vinegar. Slice luncheon meat lengthwise into 6 or 8 slices, or to desired thickness. (Less rice will be required for thicker slices)In a large skillet, heat oil over medium high heat. Cook slices until lightly browned on both sides. Add sauce and bring to a simmer, turning Spam to coat. Cover and remove from heat, let marinate for at least 5 minutes.Cut nori sheets in half and lay on a flat work surface. Place a rice press in the center of the sheet, and press ½ inch of rice tightly inside. Top with a slice of Spam, and more rice, press again and then remove mold. Wrap nori around rice, sealing edges with a small amount of water.
