Works great
we're on a low sodium diet so are trying to avoid baking soda/powder. Made muffins using this product and they are great. expensive, but not used all that often, so worthwhile

Use it for making my coffee less acidic
This is potassium, not sodium, so I feel better about using it when cooking. My true use though is a pinch in my coffee to buffer the acidity. Without adding additional sodium to my diet.

Prevents powdery mildew
I’ve tried EVERYTHING to try and stop powdery mildew and this is by far the best. Apply every 5 to 7 days starting in mid/late summer and you’ll nip it in the bud.

No sodium salt substitute for baking soda
If you are on a blood pressure health diet (sodium restricted), this is a great one-to-one, no sodium replacement for using baking soda in cooking. It comes in sealed packets. Upon opening, I transfer it to an air sealed jar to insure the potassium carbonate continues to sustain initial baking quality activity during extended storage between baking recipes Where I use it instead of baking soda.

My go-to brownie recipe failed
My go-to brownie recipe calls for the baking soda to be mixed in with the cocoa powder. Then melted butter is mixed in until smooth and glossy. At this point I add hot coffee and whisk until frothy. Unfortunately the cocoa mixture with the sodium free baking soda substitute never frothed. At this point I was worried; this never happened before when using regular sodium bicarbonate. Sure enough, my chocolate chip brownies were a complete disaster. I made them in mini muffin pans to be brownie bite sized. Every brownie sank in the middle. They were tasty, but I could not serve them. What I ended up doing was chopping them up into pieces and I used the pieces in place of the chocolate chips in a batch of Toll House Cookies. Wow! Talk about turning lemons into lemonade! My Brownie Chunk Cookies were sensational! Anyway, the sodium free baking soda substitute has sat unused in the cabinet. I haven’t risked trying it in another baking recipe. I don’t think I will be as lucky a second time salvaging the results if the baked goods do not turn out properly. My failed brownies makes me hesitant to try again. If I do, I will update this review.
