I can't afford or justify the price of a Global knife, so was wondering if this will put a good edge on a cheaper knife?

Yes, I use it on my Lakeland 9" chef's knife and it keeps it sharp. The sharpness doesn't last as long as the global knives so more frequent sharpening is required.

Does it matter that I am left handed?

Can't see why, got a left handed friend to try it she had no trouble holding it and using her right hand to pull the knife throughthe sharpeners ans she's in her 80's

What do you think the grit size for the fine wheel is?

I’ve no idea but I do know this puts a razor sharp edge on my Global knives.
