Polysorbate is made from fatty acid found in animal and vegetable fat. E422 is made from vegetable and animal fat too. It makes it natural. No chemicals added. And safe.

can the lemon yellow be used with a brush to paint fondant shapes ?

This product would not be suitable to be used as a paint. We would recommend an edible paint for this job.
