How to use mason jar vacuum sealer for evacuation?

Ensure that the electric vacuum sealer is in the central position and pressed firmly against the lid of the jar. Click on the button to activate the vacuum sealer for about 15-20 seconds and the air can be drained to the seal. The sealer can be closed by clicking the button again.

Does this work like water bath canning? I’m questioning the need for sterilization?

This doesn’t replace processing foods in a water bath or pressure canning. When canning food is heated to high temperatures to kill harmful bacteria. When water bath canning the acidity of food determines if you must pressure can instead. This item extends life of dry goods, and fresh produce etc. by evacuating air. When preserving food please refer to USDA guidelines. This product saves money by keeping food fresh longer.

Do you need to get special lids for sealing?

Regular canning lids work. They just can’t be bent, warped. They must be in ideal condition to make a seal. I am careful when opening my sealed jars so I don’t damage the lids. This way I can reuse them. The vacuum comes with both sizes: wide mouth and regular. It works great.

How long do you leave it on for? The instructions are very unclear!

It is very unclear and something that the company needs to fix. However, when you put your vacuum sealer on the jar and press start it has a counter on it. I watch the jar, and generally have it run for a minion pints, 75 seconds on quarts, and 90 seconds on half gallon sized jars. You can see your dry ingredients shift when sealing as they are becoming more compacts.
