Must boil for many hours before usable. Then, it coats everything quickly, very hard to remove from utensils used for boiling.

The sodium alginate from Modernist Pantry is a good value, and there were no problems with service or speed of delivery. There's not much to say about the product, it's just what it claims to be: sodium alginate. I mix a small amount with baking soda to treat acid reflux. I don't detect any strange taste, and it gels like it's supposed to. Good product, and I won't hesitate to buy from Modernist Pantry LLC when this supply runs out.

I actually didn't get this for culinary purposes, but for use in the lab. We're designing an intro to bio class where we make little beads of algae and use those to test photosynthesis. So far, this product works just as well as the reagent grade sample of alginate that we had on hand but for a fraction of the cost. If any other labs/schools are considering this product for the algae project, purchase it. You won't be disappointed..
