Brilliant Bread Flour!
I've been making my own bread for many years, but during COVID lockdown, I've made more than ever, and learnt quite a few new baking techniques. My one problem, 18 months ago, is that a lot of very silly people began hoarding flour, yeast, toilet paper and even manuka honey!So I began sourcing my flour on-line. Initially as one bulk sack, mid-2020, which I am finally through - and then, I spotted this Canadian flour on Amazon, and bought 3 bags. And WOW - this stuff is gorgeous. Seriously "strong" (as in loads of springy gluten), it simply makes the best bread I think I have ever baked. Even when "cut" with wholemeal flour, or rye, or other less glutinous flours, it still holds its own to create wonderful bread textures.Currently I have a "Biga" festering away to make tomorrow's Italian-style breads and two pizzas. The smell, the flavour, everything about this flour makes baking (and subsequent eating) a serious joy!FIVE stars without any hesitation.

Great bread flour
Items arrived on time and in very good condition, makes a tasty bread - just make sure you are aware that if you order "1", it is 5 x 1.5 kg bags of flour. This was not made clear and I wanted just 4 bags of flour and have received 20 - think I'll be making an awful lot of bread in the near future!

Great four yeasted and sourdough bread
I have used this flour for both yeasted loaves and sourdough and achieved great results for both. With yeasted bread I get a nice light tasty bread and with sourdough the extra protein content allows me to increase the hydration and get a nice loaf. I have fount the flour amenable to both hand mixing and for use in my my Kenwood stand mixer.This is now my go to flour.

Canadian flour is very strong
This item arrived beautifully packed and on time, I have not had time to use it yet. I bought this as I use a bread maker and the flour has to be strong, Canadian wheat guarantees this. My daughter was ready to discard her bread maker a few months ago thinking it broken and was ready to spend £100.on a new one, I went out and found some Canadian flour and hey presto perfect loaf so money saved. Some years the wheat in this country because of the seasons weather is not strong enough so if your bread is not up to scratch all of a sudden try Canadian wheat flour and see if that helps.
