Yeast extract naturally contains glutamates, an amino acid that is found in many foods and is contained in 5-15% of all dietary proteins. MSG is chemically synthesized versions of pure glutamate. As yeast extract is naturally occurring, the amount of glutamate is much less than in MSG.
