Perfect for making bresaola - should last many years
Purchased so I could make bresaola (cured beef, similar to prosciutto, popular in Italy) at home and didn't know where else to purchase it. This bag will probably last me years. The first one I made came out great with the recipe I used (google the Guardian's bresaola recipe). If anything I might have used ~slightly~ less of this as the meat was very very salty (still tasty, just too salty). I will use it again to make another two bresaola when fall comes around.Suspect it would be great for jerky.

Enhances flavor and safety
Lacking a chemical lab I can't vouch for the chemical composition but it tastes right for "red salt". If you've ever made jerkey and found the taste just wasn't right this is the answer. A teaspoon of this stuff treats 5 pounds of meat to prevent botulism when making sausage or jerkey. It also adds that certain something home processed products seem to lact. Use only the right amount. Mix well. Handy resealable zip top. I keep this pouch in a canning jar for extra protection against spilling or it becoming contaminated.

Product would probably be fine. Unfortunately the seem on the bag broke during shipping spilling the contents.
