Chocolate Covered Treats Freshly roasted nuts and cacao nibs are tumbled in hand-hammered copper pans, where they're drizzled with a rich layer of stone ground dark chocolate. TAZA Chocolate believes both farmer and chocolate maker should share the reward of making a great product. Before they can make delicious stone ground chocolate, they need to source superior cacao beans. TAZA Chocolate couldn't do what they do best without cacao farmer partners who do what they do best: grow exceptional organic cacao. That is why they are commited to maintaining direct relationships with their cacao farmers and compensating them fairly for the high quality cacao they produce. Taza Chocolate is also commited to partnering only with cacao farmers who respect the rights of workers and the environment. Direct Trade has been a key component of the Taza mission since they began making chocolate in 2006. In 2010, they developed the Taza Chocolate Direct Trade Certified Cacao program, which ensures their trade practices are third-party verified, to further establish their commitment to their cacao farming partners and customers. Where Does Taza's Cacao Come From? Taza Chocolate currently source cacao from three countries. In the Dominican Republic, they partner with La Red Guaconejo, a cooperative of small-scale cacao producers in the northern part of the country, and with an independent organic farm called Finca Elvesia, which known for its exceptional fermenting and drying facilities, and with OKO Caribe, a mission-driven cacao sourcing and processing company just outside San Francisco de Macoris which buys wet beans from small farms and ferments and dries them to excellent quality standards. In Bolivia, they source cacao from Alto Beni Cacao Company, which is a partnership between Taza and Invalsa, a Bolivian exporter of specialty coffee and other commodities. The Alto Beni Cacao Company is committed to revolutionizing the Bolivian cacao industry. Taza Chocolate do this by sustainably increasing production levels of high-quality varietals of Bolivian cacao, introducing industry-leading quality control and management techniques to Bolivia for the first time, and by directly connecting cacao producing communities in the Alto Beni region to chocolatemakers and other global buyers of specialty cacao. In Belize, Taza sources cacao from a newly formed rural economic development enterprise called Maya Mountain Cacao, Ltd., which was founded with a mission to support sustainable agricultural production among cacao farmers in the Toledo district of Belize. Direct Trade: Why Does It Matter? For producers in the global tropics, cacao is an agricultural crop of vital economic importance. The International Cocoa Organization estimates that 90 percent of the world's cacao is grown by three million smallholders, employing 14 million workers worldwide. Cacao production has a number of serious environmental and social consequences, many of which are overlooked in the conventional cacao supply chain. In its natural state, cacao grows in the understory of the tropical rainforest, yet due to commercial demands for high productivity, producers are encouraged to grow in large monoculture plots.
