Q: has anyone used for like a peanut butter sandwich? or pancakes? Or eggs?

It can be used for any type of grilled sandwich. As far as eggs, those might be too runny as it does slant a bit. Pancakes may work if the batter is thick, poured slowly, and the grill is closed on occasion. It is definitely worth it just as a sandwich maker as unlike most, there are no diagonal lines going through it while it cooks, thus burning that area. The middle turns out nice and crispy and to my surprise, the crust was still soft enough to eat and yet had enough crisp...just not as much as the middle. It is a wonderful time and money saver for someone like me who has a lot of trouble cooking due to genetics and disabilities!

it does not have temperature control, it is single rate, it plugs in and has a ready light lid.

HiNo it can't open flat. It opens exactly as the picture shows. It's small. It's more for making grilled cheese sandwiches ect . It closes so you can heat melt the cheese or whatever you are heating!

Q: Is the entire exterior "cool touch" or just the handle?

Just the handle out of the rectangular area. I love this toaster. It is fast and non stick. And very cheap.
