Bought the 7.5" Santoku as a gift to myself.I'm a big guy, and my go-to knife is a 10" chef's knife. I love it, but it's kind of in the way when I'm prepping two or three different veggies on one cutting board. I also have some pricey Wusthof santokus that are very sharp, but they are too light to feel in control of.This Fseoot knife is a dream to use. The round handle has a good heft, and fits my hand like it was custom made. Exceptional balance and maneuverability. Enough weight that you can let the knife, not your wrist, do most of the work. The cutting edge is more curved than most santokus, making it easy to "rock" with the tip against the board. Sharp and versatile... shreds half a head of cabbage, minces garlic, and it slices through raw meat like it's not even there. It doesn't have a full bolster, but that's a non-issue; the heel is deep enough that your index finger snugs behind it for stability.I love the aesthetics of this knife. The black blade with understated woodgrain handle looks cool, serious, and elegant. It also came handsomely packaged, appropriate for gifting.Highly, HIGHLY recommended. Especially at the price. This knife outperforms some name brand knives that cost nearly a hundred bucks.

Great meat cleaver for doing my Chinese cuisine
At first I felt cautious for being a senior using a sharp knife. But I soon get comfortable with it. It fits in my hand very well, and quite sharp to cut the beef flank steak and minced it into patty for making Chinese beef pot rice which tasted delicious. My food processor and old chopper just could not chop the beef the way this knife does. Mincing is a important in Chinese cooking so I can count on this knife to do some good steaming dishes for me.
