Q: Would this work with a 110w led strip light and installed in a plastic enclosure?

Yes ,will work..i hide it in my bathroom ceiling and works with 12 spotlights and 1 led strip light

Q: Will this serve 2x 20watt halgoen bulbs?

It will work but a smaller one would be better. This transformer is good for 150w

Q: will this device serve three 5 watt LED lamps on a track?

Not sure about the answer but I suspect that the transformer is over powered for three 5 watt lamps (15w in total) which is outside of transformer range of 50w to 150w. Sorry i can not be of more help.

Q: I bought this transformer but it comes with no wiring diagram. Does anyone know how to wire the 12v output side?

If you notice, there is facility to connect 3 pairs of twin cables at one end for the lamps.
