Q: There were options for silver and light grey colors. Are either plated in sterling silver or is it just the color?

I don't know if they're plated. But at that price, I highly doubt it.

Q: How many pieces come in a package? Can it be wrapped around the top of a pen?

There are twelve pieces per package. I ordered the one with three colors, copper, gold and rose gold. Yes they can be wrapped around the tip of a pen. They are very manageable.

Q: if I am using 3 mm cup chain whick size 18 g or 20 g would compliment the beaded embrodiery peice

I believe so it just gives that nice outlined finish or break between pattern
